Eggplant Potato Moussaka with Pine Nut Cream
I made this recipe a week or so ago for my family for dinner one night.
I found this vegan moussaka in the amazing cookbook Veganomicon by the extraordinary vegan cooks Isa Chandra Moskowitz and Terry Hope Romero.
It is a really nice dish, especially in winter, and even though it takes a fair bit of work and preparation, it is well worth it.
Really really nice food.
and the leftovers are even better.
